Sharp Umami / Fresh / Complexity

Made of local rice from Miyagi prefecture called “Kuranohana”. This sake exhibits pleasantly fresh fruity aromas with fine acidity and pure characteristics. Fluffy and delicate bouquet of citrus fruit and a lovelymouth-feel. Its extremely delicate texture and aroma compliment exquisite dishes instead of overpowering them. This sake is brewed for stimulating your appetite and being easy to drink even during the latter stages of a meal. If you’ve never tried the heavenly combination of sake and caviar, this is the place to start.

Green apple / Soft / Elegant

The brewery is located in a valley surrounded by mountains, blessed with high precipitation, resulting in a boundless supply of good quality soft spring water, perfect for brewing Sake. KID is name.

The gently sweet aroma is refreshing, and it’s like green apple. The texture is soft and lightly fizzy. As soon as sipping it, the crystal-clear sourness spreads in the mouth. The body is very tight, and the profound sweetness oozes out from the fine-grained Umami. 

Pairing: 
Beef tataki, grilled fish, grilled vegetables, gambas al ajillo.

Pear / Refined Dryness / Complex

Utilizing the pristine water of Mount Tenzan, indicated by the abundance of fireflies that congregate at the spring. The powerful aroma greets you with a delicious pear, peach and yohgurt scent, which hints at the flavor. The flavor characterized by its breadth and fullness. Each sip brings a sweetness that plays out on your palate before it's wrapped up by a surprising dryness and just a touch of earthiness as well.

Kawatsuru

Junmai Ginjo

Sharp / Medium Body / Balance

Kawatsuru translates to “river crane” and comes from the sighting of a crane in the river behind the brewery. Crane of Paradise is described as “umakuchi,” a combination between sweet, dry and umami flavors.

Using Omachi rice which tends to give sake complexity and wilderness. Less fragrant but more defined flavor elements and eathiness than other types of sake rice. First sip is clean and dry   and then gradually bold omachi rice umami and sweetness follow. A varitery of temperature can be enjoyed.

Cheese, pizza, fatty sashimi, grilled fish, grilled vegetables
