Complexity / Rice Aroma / Full Body

Rice polishing is low rate 77%. Tomita Shuzo brews full body with rich rice umami which is a great pair with rich taste dishes. This sake has complex flavor as acidity, bitterness, sweentness and dri umami. A sake rice "wataribune" was once endangered but some Shiga breweries and local rice farmers coorporated to revive the rice. The legendary brewery Shichihonyari brews sake with legendary rice delivers the ancient taste of Japan.

Vanilla / Soft / Sweetness

The master sake brewer Takeshima san is one of most innovative sake brewers in the industry. Sensation series are brewed by Junmai Daiginjo class method but using Shiga local table rice in order to offer reasonable price. Nuances of vanilla and banana. Texture is clean, fresh and soft.

 Jamon, prosciutto, cheese, smoke salmon, caviar.

“KID” Junmai, which exhibits a soft mouth feel and offers an acidity that is well balanced with the gentle umami of sake rice.  Brewed using the soft and clean spring water of Wakayama Prefecture, “KID” Junmai opens the door for sake beginners..

A wonderful The Junmai Sake on the scene from Saga. Utilizing the pristine water of Mt. Tenzan, indicated by the abundance of fireflies that congregate at the spring. This sake has a calming sweet aroma which is reminiscent of honey as well as a refreshing aroma of green apples.The refined sour flavor wraps up a palette mildly. Elegant medium bodies dry sake.

Rich Umami / Complex / Mellow 

A wonderful The Junmai Sake on the scene from Saga. Utilizing the pristine water of Mt. Tenzan, indicated by the abundance of fireflies that congregate at the spring. This Junmai is both unique for the low polishing ratio of Yamada Nishiki rice at 75% and that it is matured for a couple of years in a refrigerated storage. Complex sweet aroma of candied banana or brown sugar syrup. Tastes of sweet corn and dried figs or apricots, green vegetal on the mid palette with a bright and lively finish. A versatile sake to pair with rich-flavoured dishes.
