This sakewon the 92-point Parker point. Their classic series are focused on keeping their tradition as the oldest brewery in Tochigi. This example uses the Kame no O rice. Clean perfumes of kyoho grapes, peaches, light cotton candy & citrus peel. Very light, clean and dry on the finish.

This sake has a sharper nose and a froward flavour. Bouquet of fresh fruit laced with hints of mineral provides a complex nose. A rich rush of fruit unloads on the first sip, with a flavour that tapers gradually. Ripe acidity accompanies by to make a complex & enjoyable drink.

This is made by Kimoto method which is non-yeast additive, not the top of that, this is the one fermented by the wooden barrel that sake lovers must check. The colour is bright golden yellow. The first note is the aroma like an orange that you can feel the sourness. The sourness jumps out at the first when you sip it, then the juicy and mellow sweetness and umami spread proportionally.
